Ardel's Potato Mac Salad

Ingredients:
1 C. elbow macaroni
3 small potatoes
4 boiled eggs
3 stalks celery, chopped
2 T. minced onion
1/2 C. surumi (fake crab) broken into small pieces
1-1/2 C. mayo
1/2 t. sugar
White pepper
Parsley for color (optional)

Boil potatoes in salted water. Drain and slightly salt potatoes. Cool, then chop into 1/2″ cubes. Mix cooked macaroni, potatoes and all other ingredients together.

Note: If surumi is not bright red, add grated carrot for color.
