Helen's Potato Salad

Russet potatoes (about 5)
5 eggs
Mayonnaise
Mustard
Celery  (at least 3 stalks)
Yellow onion (one whole small/med onion)
Salt/pepper

Stab potatoes with fork and microwave until cooked (about 3 minutes per potato depending on size of potatoes). Mom would micro one potato at a time. Peel skin off potatoes once cool enough to handle. Cut potatoes and put in a bowl.  SALT POTATOES WHEN HOT. Mom said the potatoes absorb the salt better. Boil eggs (put eggs in tap water bring to a boil and then cover and turn off fire and leave for 10 minutes, hard boiled eggs come out perfectly). Add chopped egg, celery, and onion to bowl of potatoes. Add a squirt of mustard. Add mayo until desired consistency. Add pepper at the end.
