Sushi – old Honda recipe, passed down from Obachan to Auntie Helen Rice: 4 cups of cooked rice 1/3 c sugar 1/3 c vinegar 1 t salt
Vegetable/aburage cooking sauce 1 c water 1 pkg of dashi no moto 5 T sugar 1/3 c shoyu 2 t mirin 1/4 – 1/2 t salt Veg: gobo (cut in nori length if making maki sushi), kampyo, shiitake mushroom Veg for color: (watercress, green beans, carrots, etc.) – par boil in salted water
To make maki (rolled) sushi – watch Auntie Helen’s video. To make cone sushi – prepare aburage in the shoyu sauce above or purchase already prepared ones from Marukai (usually very sweet so squeeze, rinse, then boil in water with some shoyu.) Chop the cooked vegetables, mix into the sushi rice, then stuff the aburage.
