Aunty June remembers Aunty Helen and Uncle Koji making this when we lived at Koko Head.
1 C. shoyu 1/2 C. catsup 3 t. grated ginger 3/4 C. sugar 2 heaping tsp Coleman’s powdered mustard 1/2 C. vinegar 1/4 C. vermouth (optional) Pinch of oregano Use sauce for beef or pork ribs. Beef: marinate beef ribs with sauce and grill or broil on high – medium rare is good
Pork (Ardel’s recipe): Rub salt, pepper, and garlic on pork ribs and place bone side down in roasting pan. Pour a can of beer over the racks, cover with tin foil, and bake – 350 degrees for 15 minutes, then lower to 275 degrees for 2 ½ to 3 hours. Done when fork pierces pork easily and hopefully before meat is pulled back from the bone. Marinate with sauce and grill or broil on high.
