2 cans spam

3 large russett potatoes

1 can corn – drained

1 can cream corn

1 small bag of cheddar cheese shredded

salt and pepper to taste

 

Preheat oven to 350 degrees

 

In a 9×13 pan put a light coat of oil on bottom

 

Wash and poke potatoes with fork and place in microwave for 7-8 minutes

(want it slightly undercooked so not too soft)

Slice potatoes into wedges

 

Cut Spam into 8-10 slices and fry – set on plate

 

Now layer all the ingredients – start w/ cream corn

Corn

* and then another layer

 

2 layers

 

On top put cheese – as much as you like (my kids want the whole bag)

 

Cover w/ foil and bake for 30-35 minutes until bubbly.

 

Remove foil and leave for another 5-10 minutes until cheese starts to brown.

 

Serve hot

 

Ono w/ tabasco or tapatio on top
